Dedicated to honey cake fans.
For a diameter of 18 cm and 6 cake layers
Dough:
- Flour - 230 g
- Butter - 50 g
- Sugar - 100 g
- Honey - 50 g
- Egg - 1 pc
Cream:
- Cottage cheese - 250 g
- Powdered sugar - 50-70 g
- Heavy cream (30%) - 250 g
Preparation:
- Place the honey and butter in a water bath and stir until the butter is completely melted.
- Add baking soda while stirring constantly until the mixture turns caramel in color. Remove from the water bath and let it cool to a warm state.
- In a separate container, beat the egg with sugar until fluffy.
- Add the egg mixture to the warm honey mixture, mix until smooth, and add sifted flour. Knead the smooth dough.
- Divide the dough into 6 pieces, roll out each cake layer with a diameter of 18 cm, prick with a fork and bake for 4-6 minutes at 180°C until golden brown. Bake offcuts of the dough in the same way. Then crumble them into fine crumbs to cover the top of the cake.
- Let the cake layers cool and soak them with a mixture of water and honey in a ratio of 2:1.
- Beat the cottage cheese, heavy cream, and powdered sugar until thick cream.
- Assemble the cake, cover it with the remaining cream and sprinkle with crumbs from the cake layers.
